Best suggestion I can give you about photography(and you do seem to have a good eye for it) is to take a night course at a local college. Cost you about $150 or so and it will give you SOOOOO much more knowledge its not even funny.
I took one and I use a very old film SLR camera because it takes VERY clear photos and is FULLY manual with NO automatic options so you HAVE to learn to use the camera, not just put it on auto and go.
My digital camera, while not QUITE up to the quality of yours(Jamie) is quite good too, and all of that knowledge is very useful with it.
But, learn composition, aperature, shutter, use of tripods, etc, and then when you are really good at that, then go onto photoshop. Because no matter what you do to your photos digitally, its still the original photo that matters.
Also another place to hang out is on Flickr. Some very good groups to join about photography, from beginners to professionals. Some of those shots are absolutely amazing...
