No Coolant Temp Sensor?

I dont think I have a coolant Temp Sensor. The Plug is there but no sensor. Will this affect anything? How Much Are These Bad Boys?

What do you mean by plug?  The sensor itself is not all that visually spectacular it basically is a plug -  just a thermocouple.  It's possible to trick it for a certain driving condition with a resistor which it could have been possible somebody did.  Most of those $5 "chips" on ebay for cars just are a resistor with some casing around it and they tell you to wire it up to your coolant sensor circuit to run slightly more rich so this is where that "25 horsepower" is coming from.  Couldn't tell you what was done on yours though.
